Tired of rice? Try barley! It’s absolutely delicious in salads and it’s a nutritious whole grain.
This is a very simple salad; the idea is that you can come up with endless variations according to what you have on hand.
You should know that barley contains gluten, so if you are on a gluten-free diet, you’ll still want to stick to rice in your salads!
Serves 4 – Prep. time 10 min
2.5 cups (400g) cooked barley
1 red pepper, diced
2 tomatoes, diced
1 tsp oregano
1/2 tbsp fresh parsley, chopped
a few black olives
1/2 tbsp red wine vinegar
1 tbsp olive oil
Simply mix all the ingredients together and refrigerate until you serve.
Variations can be made using raw zucchini, cooked chicken breast, shrimps, nuts.
