My kids, like all kids in the world I think, love to have some ice cream in summer. But as I can only find the usual commercial ice cream here, and that I really don’t want to give them this kind of Franken-food, I needed to find a solution.
And I have come up with this great recipe, which is not only delicious, but also super easy and super quick to make. It also has the advantage to taste much better than water popsicles, and to be a lot more nutritious.
Makes 4 – Prep. time 5 min
2 ripe bananas
3 tbsp coconut milk
Peel and cut the banana into pieces. Then, simply put the banana and the coconut milk in the mixer and mix for a few seconds until you get a smooth mixture.
Pour the mixture into the popsicles, and place them in the freezer. After a few hours, ice cream is ready!
