In summer we just love to eat big salads. it’s so warm outside that the kitchen gets hot and we don’t feel like cooking a lot.
Here is a very healthy and nutritious salads that can be eaten for lunch. Chicken will provide proteins, avocado and olive oil will provide enough fats, and all the other ingredients will provide vitamins, minerals and enzymes.
You can use chicken leftovers from previous meals, or just quickly grill some chicken breast pieces.
Serves 4 – Prep. time 10 min
1 lettuce head
1 red pepper
14 oz. (400g) chicken breast
2 tbsp grilled sesame seeds
1 tbsp red wine vinegar
3 tbsp olive oil
Cut the chicken into strips and cook in a pan with 1 tsp olive oil for about 5 minutes.
Dice the tomatoes, the cucumber, the avocado and the bell pepper.
In a salad bowl, arrange the lettuce, tomato, bell pepper, avocado, chicken; drizzle with vinegar and olive oil, and sprinkle sesame seeds on top.
Sprinkle with a few chopped chives.
