This is a slow-cooker recipe that I love, for 3 reasons:
1. It is de-li-cious (and kids loooove it, too)
2. It is super healthy
3. It takes 20 minutes to put together and you can do whatever you like while it cooks.
Beef cheeks are one of these cuts that are pretty hard to get, I must say. Most butchers will not sell it, as the slaughterhouses usually have contracts with pet food manufacturers, and these delicious cuts, just like liver, kidneys, heart, etc., usually end up in your dog or cat’s plate rather than your own.
So, you will need to ask for them. I have found a place that sells them, and this is a good thing, because it is most probably the most tender cut of the whole animal.
It has lots of gelatin, which is especially healthy for our joints (arthritis sufferers, take note). Gelatinous stews are indeed very rich in the entire family of joint-building molecules.
This recipe takes 20 minutes to prepare, and at least 3 hours to cook. 4 hours are even better. The key rule: don’t rush it! You can also prepare this recipe up to 2 days before you eat it, as flavor will improve over time (just like for many other slow cooker dishes).
Serves 6 – Total time 4h20 min
3.3 lbs (1.5kg) beef cheeks
1 medium onion, finely chopped
1 medium carrot, finely chopped
1 tbsp butter
1 bottle of red wine (low quality is ok)
1 tbsp tomato paste
2 bay leaves
2 lbs potatoes
2 lbs carrots
Heat butter in a slow cooker pot over moderately high heat until melted. Add the onion and carrot, and fry for about 2 minutes on medium heat.
Season beef cheeks with salt and pepper. Add beef cheeks to the pot and cook, stirring, for 5 more minutes.
Add wine to the pot, as well as bay leaves and tomato paste. Bring to a boil.
Reduce heat to low, cover, and cook for 3 to 4 hours, stirring from time to time.
Beef cheeks will be very tender, especially if you can cook them for 4 hours.
About 40 minutes before your meal, cook potatoes and carrots in water and about one cup of the meat’s cooking liquid, until done.
Serve beef cheeks together with the vegetables and enjoy this delicious cut!
