This salad is a variation from this other barley salad, this time with green olives and sun-dried tomatoes.
Barley is very good in soups but also in salads; it is tastier than rice and can be seasoned with Mediterranean ingredients.
Serves 4 – Prep. time 10 min
2 cups (320g) cooked barley
0.8 cup (100g) feta cheese, diced
15 green olives
a few sun-dried tomatoes, chopped
1 tbsp flax seeds
2 tbsp cashew nuts
1 tbsp parsley, chopped
1 tbsp olive oil
1/2 tbsp lemon juice
Mix all the ingredients in a salad bowl.
Chill until you serve.
